Festive Chicken and Potato Kurnik Pie with Pancakes

A real decoration for any holiday — you can’t take your eyes off it! Classic kurnik with chicken and potatoes and pancakes has always been considered festive. It takes a long time to prepare, a lot of ingredients are used, but this is precisely what makes it a very tasty, rich pie that will become the main decoration of any feast!

Dough for chicken:

Wheat flour 300 g
Eggs 2 pc

How to make a classic kurnik with sour cream with chicken, potatoes, mushrooms and pancakes in the oven? Prepare your food. For chicken chicken you need boiled chicken meat. It can be replaced with baked, fried, even smoked meat is suitable. If there is no ready-made meat, then it should be boiled. Wash the chicken legs, place in a saucepan in cold water (it should completely cover them), put on the fire, after boiling, cook for 30 — 40 minutes, add salt to the broth.

While the chicken is cooking you need to prepare the pancakes. You can bake them according to your favorite recipe, or you can buy store-bought ones. How to prepare the dough? For pancakes, beat the eggs into a deep bowl, add salt, sugar (you don’t have to add it), mix. Pour in the milk and mix thoroughly again. Add sifted flour and stir. Use boiling water (2 — 3 tbsp) to extinguish the soda over the dough and mix again. Before baking, add vegetable oil. The dough turns out to be pancake-like.

Heat the pan for pancakes and, if necessary, grease with vegetable oil, fry the pancakes on both sides until cooked. Coat the finished pancakes with butter. From this amount of dough I got 10 thin pancakes. My frying pan has a diameter of 22 centimeters. How to make fillings for our chicken? For the mushroom filling I will use fresh champignons. But you can also take wild mushrooms. Clean the champignons from debris and soil, rinse under running cold water and cut into medium cubes. Also chop the onions.

In a frying pan with vegetable oil, fry the chopped mushrooms and onions over medium heat until tender. Do not dry out the mushrooms; they should be juicy.

Once the chicken is cooked, cool it and remove the meat from the bone. Cut the boiled meat into medium cubes. Chop the peeled carrots and onions. Heat the vegetable oil in a frying pan over medium heat and fry the carrots and onions over medium heat first, then add the chopped meat and fry everything together. Add salt and pepper to taste. Do not allow the meat and vegetables to burn or overcook.

To make the potato filling, peel the skins from the potatoes and boil until half cooked. Then drain the water, cool the potatoes and cut into small cubes. Add salt and ground black pepper to taste, stir.

The dough for Kurnik is unleavened, but if desired, it can be replaced with puff pastry or yeast dough. For the pie dough, melt the butter and cool to room temperature. Read at the end of the recipe for information on how to melt butter correctly.

In a deep bowl, mix the sifted flour with salt and soda. Add eggs, sour cream and butter. Knead the dough. It turns out to be very pliable and soft, easily assembled into a ball. Depending on the size of the eggs, the fat content of the sour cream and the quality of the flour, you may need a little more or a little less. Divide the prepared dough into approximately two parts. Cover one part with a towel. Roll the other into a circle larger than the diameter of the pancakes. Make the dough approximately 0.5 cm thick.

It is better to assemble the pie directly on baking paper. For convenience, you can use a detachable form. Turn on the oven to preheat to 180 degrees. Place the pancake on the circle of dough.

Place half of the mushroom filling tightly onto the pancake.

Place the pancake on top, and tightly place half of the chicken filling on it.

Layer the next layer with a pancake and lay out half the potatoes. Place pieces of butter on top of the potatoes. Repeat all layers and cover the last layer with a pancake.

Roll out the remaining dough (leave a little for decoration) into a thin circle with a diameter larger than the pie itself and cover the filling with it.

Decorate the pie as desired and possible. Make a hole in the middle of the cake to allow steam to escape. Brush the surface of the pie with a raw egg. Place the pie in the oven for 1 hour.
