Recipe instructions

Step 1

Step 1
Letʼs prepare the ingredients for the pie according to the list. Letʼs start by preparing shortcrust pastry. Place softened butter in a bowl. If desired, butter can be replaced with margarine, the pie will be cheaper, but this will not negatively affect the taste. Pour in sugar and beat in a chicken egg, add a pinch of vanillin and a pinch of salt to balance the taste. Mix the ingredients with a blender or mixer until a homogeneous mass is obtained.

Step 2

Step 2
Sift the wheat flour, add baking powder, mix. Pour the wheat flour and baking powder into the bowl with the liquid mixture.

Step 3

Step 3
Stir and knead into an elastic, smooth dough. You cannot knead shortbread dough for a long time. The main thing is to collect it into a ball.

Step 4

Step 4
Divide the dough into two parts, wrap the larger piece in cling film and put it in the refrigerator for half an hour, the small piece in the freezer. Meanwhile, prepare the lemon pie filling. Wash the lemons with soap and dry with paper towels.

Step 5

Step 5
Cut the lemons into pieces and place in a bowl. Add sugar. The amount of sugar can be increased or decreased according to taste. Using a blender or through a meat grinder, grind the lemons with sugar to form a porridge-like mass. Transfer the lemon mixture into a metal bowl and put it on the fire; simmer the lemons for 15 minutes over medium heat until the mixture thickens a little. Let the lemon filling cool slightly.

Step 6

Step 6
Remove the dough from the refrigerator and freezer. We roll out most of it into a round layer according to the size of the mold, but with a margin to create small sides. Spread the lemon filling over the dough.

Step 7

Step 7
Grate a smaller part of the dough on a coarse grater and sprinkle it over the top of the pie filling. Preheat the oven to 200 degrees. Place the pie in the oven for 25 minutes, focusing on the operation of your oven. The pie should be slightly browned on top. Remove the pie from the oven, let it cool slightly and serve.
