By adding semolina it becomes looser, and sour cream makes the crumb heavier and moister. It is not necessary to use a mixer for preparation; a whisk will suffice.

How to make charlotte with semolina and apples without flour in the oven? Prepare your food. Measure all ingredients into a glass of the same volume — 250 ml. Take eggs of category C1, sour cream — 15-20% fat content. You can take more apples — two were clearly not enough for me. Choose aromatic varieties so that they are more noticeable in the charlotte. Turn on the oven to 180 degrees in advance.

Wash and dry the eggs. Beat them into a deep bowl. Add sugar and a pinch of salt to the eggs — it will balance the taste of the baked goods. You can reduce the amount of sugar according to your taste. Beat the eggs and sugar with a hand whisk. It will be enough to achieve a light foam.

Add sour cream to the beaten eggs. Mix well with a whisk until smooth.

Add semolina and sifted flour mixed with baking powder to the sour cream-egg mixture. Do not skip sifting the flour — this will not only get rid of possible debris, but also enrich it with air, which will significantly improve the quality of baking.

Stir the dough until smooth. The consistency should be like drinking yogurt, quite liquid. If the dough is too thick, thin it with milk or kefir. This is important, since semolina will make the dough even thicker when it swells. Leave the dough to rest for 15 minutes.

In the meantime, prepare the apples. Wash them and peel them. Cut in half and remove the core with seeds and the place where the stalk is attached. Cut the apple halves into slices.

Take a suitable baking dish. I have a detachable one, with a diameter of 20 cm. I lined the bottom with parchment. If necessary, grease the pan with a small amount of vegetable oil. Please note that in this case they will end up at the bottom of the pie; you can do the opposite, pour the dough first, and only then place the apples. I repeat that you can take more.

Pour the dough on top.

Bake the charlotte in the oven, preheated to 180°C, for 30-40 minutes. The exact time will depend on the height of the cake and your oven. You can check readiness with a toothpick — insert it into the middle of the charlotte and immediately remove it. If it is dry, then the charlotte is ready. The top of the charlotte will brown.
