Flour 340 g

Lemon zest 2 tbsp
Lemon juice 4 tbsp
Baking powder 2 tsp

How to bake a pie without eggs using milk? Prepare the necessary ingredients according to the list. Take the highest grade flour. Vegetable oil is preferably refined and odorless. I use sunflower, since olive can give a slight bitterness. You can replace milk with natural yogurt or kefir, but the amount of flour in this case may change.

Sift the flour into a bowl and mix it with sugar, zest, baking powder and salt. Below the recipe, see information on how to properly zest a lemon.

Pour milk at room temperature into the flour and stir the dough with a whisk until smooth. If you are making a pie for the first time, add milk in parts and watch the consistency. Pour vegetable oil and lemon juice into the dough and mix again. Focus on consistency. The dough should be semi-thick and flowing.

Pour the dough into a silicone mold and lightly tap the mold on the counter to release excess air from the dough. If the mold is made of a different material, it is better to cover it with parchment and grease it with butter. Bake the pie in an oven preheated to 180℃ for 40-50 minutes until the skewer comes out dry. You will find information about baking dishes and oven features at the end of the recipe under the steps.

While the cake is baking, prepare the syrup. You donʼt have to soak the pie in syrup. But it makes baked goods juicier and more aromatic.

Pour lemon juice into a saucepan and add sugar. Bring the mixture to a boil over low heat and simmer for 5-7 minutes.

Pour the syrup into a convenient container and cool. Properly brewed syrup will thicken when cooled.

Without removing the cake from the mold, make deep punctures in it with a skewer. Pour syrup on top. Let the pie cool completely.
