Fluffy Milk Pie with Berries or Fruits

Simple but very tasty baked goods for a cozy tea party! Milk pie is baked without yeast, using soda or baking powder. You can add any berries or fruits to it. Preparing the pie is easy and simple; you can quickly bake it before your guests arrive. It turns out incredibly fluffy, with a delicate taste.

How to make a pie with milk without yeast? Prepare your food. To make the pie fluffy and tasty, all ingredients for it must be at the same room temperature. Therefore, remove eggs and milk from the refrigerator in advance. If you do not have time to do this, then heat the eggs in warm water and the milk in the microwave. Absolutely any berries and fruits are suitable, you can take frozen ones. I have blueberries. Turn the oven on 180 degrees.

Beat the eggs into a bowl. Start beating them with a mixer at medium speed. When they appear lightly foamy, begin adding sugar in portions, beating well after each addition. Also add a pinch of salt — it will serve as a flavor enhancer. When all the sugar has been added, increase the speed. Beat the eggs until light and fluffy, about 10 minutes.

Then pour milk into the egg mixture in three additions. After each serving of milk, add flour mixed with baking powder in parts, sifting it through a sieve. Instead of baking powder, you can use baking soda slaked with lemon juice. Carefully, so as not to damage the whipped mass, stir the milk and flour into the dough. It may take more or less flour than the specified amount, check the consistency. The dough should become homogeneous and fluid, like thick yogurt.

Take a suitable baking dish. I have a detachable one, with a diameter of 20 cm. I lined the bottom with parchment and did not grease the sides. Pour the dough into the mold. Place berries or sliced fruit on top. You donʼt have to defrost frozen ones. Lightly press them into the dough. The links at the end of the recipe will help you choose parchment and shape.

Bake the pie in the oven, preheated to 180°C, for 40-50 minutes. The exact time will depend on your oven and the size of the cake. Mine baked for 50 minutes. Check doneness with a wooden skewer — it will come out dry from the center. The top of the pie will be nicely browned. The exact time depends on your oven.
