Recipe instructions

Step 1

Step 1
How to bake pumpkin pies? First, knead the yeast dough. Measure and prepare all the necessary ingredients. Be sure to sift the flour to saturate it with oxygen. Melt the butter in the microwave or in a water bath. Remove the eggs from the refrigerator in advance; they should be at room temperature.

Step 2

Step 2
Prepare the dough. Heat the milk to 38 degrees. If the milk is too hot, the yeast will die; if it is cold, it will not work. Dissolve dry yeast in it, add 2 tablespoons. l flour and sugar. Stir and leave in a warm, draft-free place for 15-20 minutes. After the specified time, a fluffy yeast cap should form on the dough.

Step 3

Step 3
Add eggs, a pinch of salt, melted butter and flour to the dough. Add flour in parts, focusing on the consistency of the dough. Please note that you may need more or less flour than indicated in the recipe, check the consistency. The dough should be soft, elastic, not clogged with flour, and not stick to your hands. Cover the bowl with the dough with a towel and place in a warm place for 1 hour. During this time it will rise and double in volume.

Step 4

Step 4
While the dough is rising, prepare the filling. How to prepare filling for pumpkin pies? Prepare the ingredients. Wash the pumpkin, cut it and remove seeds and skin.

Step 5

Step 5
Grate the required amount of pumpkin on a coarse grater.

Step 6

Step 6
Transfer the grated pumpkin to a bowl. Add sugar and ground cinnamon. Adjust the amount of sugar to your taste. Add a pinch of ground nutmeg if desired. If you want, you can simmer the filling for a little while (about 10-15 minutes) in a frying pan under the lid until the pumpkin is soft.

Step 7

Step 7
Place the dough on a work surface (I use a silicone mat). I didn’t add any flour because the dough didn’t stick to the table or my hands at all. Knead it. Divide into two parts. Roll one part into a sausage. Place the second one back into the bowl and cover with a towel to prevent it from chapping.

Step 8

Step 8
Divide the dough block into equal pieces (about 10 pieces). Roll each piece into a ball and leave to rest for 2-3 minutes. Now knead each ball with your hands or roll it out with a rolling pin into a cake approximately 5 mm thick.

Step 9

Step 9
Place about 2 teaspoons in the middle of each circle. l filling. Form a pie by carefully pinching the edges of the dough from the middle to the edges. It is important that the filling does not get into the seam, otherwise the pies will burst during baking and leak. If you like, make a curly pattern along the seam of the dough.

Step 10

Step 10
Place the formed pies on a baking sheet previously lined with baking paper. If desired, brush them on top with a mixture of one yolk and 1 tbsp. l milk. Bake the pies for about 25-30 minutes in an oven preheated to 180 degrees. Determine the exact baking time and temperature based on your oven.

Step 11

Step 11
When the pies have acquired an appetizing, beautiful “tan,” remove the baking sheet from the oven. Let the baked goods cool slightly, covering the baking sheet with a towel, then transfer to a basket or plate. Serve the finished pies with tea or with warm milk.
