Ingredients (9 portions)

For dough:

Salt to taste
Wheat flour 230 g
Butter 110 g
Milk 2 tbsp
Powdered sugar 2 tbsp

For filling:

Walnuts 50 g
Dates 200 g

For sprinkling:

Wheat flour 50 g
Cereals 40 g
Butter 50 g
Powdered sugar 2 tbsp

Letʼs do the test.

In the bowl of a food processor, combine flour, powdered sugar, a pinch of salt and chopped butter. Grind everything until crumbly.

Add cold milk (you may need a little more or less, add 1 tablespoon at a time) and mix until it becomes a moist crumb.

We collect the crumbs into a ball and put them in the refrigerator for 20 minutes.

For the filling, combine dates (pitted) and nuts in a food processor. Grind into a homogeneous mixture. If you don’t have a food processor, then use a knife to cut everything into small pieces.

I had fewer dates and added a handful of cranberries and a handful of light raisins.

Letʼs prepare crumbs for sprinkling.

Mix flour, powdered sugar, flakes (I crushed them first, but this is not necessary) and butter.

Grind into crumbs.

Roll out the dough and place it in the mold. Prick with a fork, cover the top of the dough with a sheet of paper and add a load (beans or peas). Bake at 180 C for about 15 minutes.

Remove the weighted paper and bake the crust for another 10-15 minutes until done.

Apply the filling to the finished crust (it’s easier to do this with wet hands).

Sprinkle crumbs on top.

And bake at 180 C for about 15-20 minutes until golden brown. Let the pie cool completely, cut into squares and serve. Bon appetit!
