For dough:

Wheat flour 350 g
Water 175 ml
Eggs 1 pc
Vegetable oil 2 tbsp
Dry yeast 1 tsp
Sugar 1.5 tbsp

Rice 0.5 cup

Butter 2 tsp

How to knead the dough for delicious yeast pies? First you need to activate the yeast. Take a bowl, pour warm water into it, temperature about 37-39 degrees. Hotter water will kill yeast, which is a living organism. And in cold water they simply won’t wake up. Put a couple of tablespoons of flour into the water and stir. Pour in the yeast and stir with a whisk.

Cover the bowl with a towel and leave for 15-20 minutes. During this time, a foam cap should appear on the surface of the water — this means that the yeast is active, it has woken up and is ready to work. If this does not happen, then you need to use other yeast; with this the dough will not rise.

Sift the flour through a sieve into another bowl. Sifting aerates the flour, which will make your baked goods softer and fluffier. Donʼt skip this step, especially when making yeast dough.

Add salt and sugar to the flour, mix.

Cover the bowl with a towel or cling film and place the dough in a warm place to rise for one and a half to two hours. Since flour from different manufacturers has different properties, you may need a little less or more.

How to make filling for pies? Boil the eggs in advance. It is better to use short-grain rice, not steamed.

Rinse the rice well in several waters until the water runs clear. Next, pour cold water over the rice in a ratio of 1:1.5 (for one part of rice, one and a half portions of water) and cook over high heat. As soon as the water boils, reduce the heat to low. Cook the rice for 15 minutes with the lid closed. Then turn off the fire. Do not open the lid of the pan! Let the rice sit for another 15 minutes.
