Potato and Herring Quiche Pie

The perfect combination of potatoes and herring in an unusual gourmet dish. A very original pie for those who love herring and potatoes. A peculiar imitation of the French layer cake — quiche. Only instead of the usual chopped dough mixed with wheat flour, there is a dough made from a mixture of potatoes and hard cheese. Then — filling and filling with cheese, eggs and cream. The main thing is to let the cake cool, then it will be easier to remove it from the mold without damaging its integrity. The filling will become thicker and denser. And the taste of the pie will also change — it will become even tastier. The pie is good slightly warm or cold.

Ingredients for making Potato Pie with Herring. Peel and wash the onions or leeks. We either clean lightly salted herring ourselves from bones, small and large, removing the backbone, head, etc. Or we buy ready-made herring fillets. Wash the potatoes thoroughly under running water, cleaning them with a brush. Boil the potatoes in their jackets until tender (check by piercing the tubers with a fork: if the fork goes in easily, then the potatoes are ready). Let cool.

Fry the onion, pre-cut into half or quarter rings, or the chopped white part of the leek in olive oil until lightly browned.

Grate all the hard cheese on a medium or fine grater. In another container, cut the tomatoes into cubes.

Grate the cooled, peeled potatoes on a medium or fine grater. Place it in a deep bowl and add about two-thirds of the grated cheese there. We reserve a third of it for preparing the filling. Combine the grated potatoes and cheese, mix (using your hands) until smooth.

Take a springform baking dish with a diameter of 20 cm and line it with baking paper. We oil it, because the potato mixture sticks to it quite tightly after baking. This is the 1st option. 2nd option (it seemed to me that it was more convenient for removing the finished pie): I cut out a circle from baking paper along the diameter of the bottom of the mold, carefully greased it and the walls of the mold with butter, and generously sprinkled the bottom and molds with crushed breadcrumbs.

We put the potato mass into the mold, compact it and make the sides into a ʼplateʼ. Place fried onions on the bottom, on top — herring cut into medium pieces, on top — diced tomatoes.

Then prepare the filling: beat the egg a little, add cream and the rest of the grated cheese. Stir until smooth.

Pour the filling into the pie. Place the pie in an oven preheated to 180 C for 25-30 minutes until a golden brown color appears on the surface of the pie.

If desired, the finished pie can be sprinkled with ground black pepper. Let the pie cool. Then carefully use a spatula to release the sides of the cake from the rim of the pan. Open the pan and carefully, using two spatulas, remove the cake from the bottom of the pan and transfer it to a plate.
