Recipe instructions

Step 1

Step 1
How to bake a fluffy classic charlotte with apples in the oven? Prepare all the necessary ingredients. Choose green apples that are sweet and sour and not very juicy. Excessive moisture may cause baked goods to rise poorly. Take dense fruits. When baked, soft ones will fall apart and turn into mush, but we need them to retain their shape and structure. You will need three medium-sized apples or 5-6 small fruits. Turn on the oven to 180 degrees in advance.

Step 2

Step 2
In a container, combine the eggs with sugar and beat with a mixer at low speed for 3-5 minutes until fluffy. How to check that the egg mass has already been beaten enough? The mass should turn white and noticeably increase in volume, and the sugar crystals should completely dissolve. Draw a line with a whisk; if it does not disappear within 1-2 seconds, then the eggs and sugar have been beaten well. If the mark immediately spreads and disappears, continue whisking.

Step 3

Step 3
It is important to sift the flour to saturate it with oxygen. The splendor of the baked goods depends on this. Since the type and quality of flour is different, you may need a little less or more of it. You can read more about the properties of flour at the link at the end of this recipe.

Step 4

Step 4
Pour the flour into the egg mixture, but not all at once. Add it in small portions as needed to achieve the desired dough consistency. It should be like thick sour cream. Continue beating with the mixer at low speed each time.

Step 5

Step 5
Add salt. Stir with a silicone spatula, but not for long, otherwise the dough will settle and the biscuit will turn out dense. The consistency of the dough should be smooth, homogeneous, without lumps, viscous and creamy. If everything is done correctly, the dough will flow from the spoon in a wide ribbon. Read about biscuit dough at the end of the recipe.

Step 6

Step 6
Wash the apples and dry with a paper towel.

Step 7

Step 7
There is no need to peel the apples. Cut the fruit in half. Remove the core with seeds. Cut into neat slices about 1 cm thick or small cubes. To prevent the fruit from darkening, sprinkle it with lemon juice. The more apples there are in the baked goods, the tastier it will be. But donʼt overdo it. A large amount of filling will not allow the dough to rise to the desired size.

Step 8

Step 8
Take a round mold (⍉ 22 cm). The container may be a little larger, but then the cake will not be as tall. Line the bottom with parchment. Or grease it with butter or refined sunflower oil. The main thing is not to overdo it with fat, as this will negatively affect the baked goods. Sprinkle the bottom and sides of the pan with flour or semolina. Place apple cubes. If you cut into slices, fan them out.

Step 9

Step 9
Pour the batter on top of the apples. Twist the pan so that the biscuit mixture fills all the space between the apple slices.

Step 10

Step 10
Bake the pie for about 30-40 minutes until golden brown. To prevent the sponge cake from settling, do not open the oven for the first 20 minutes. The baking temperature may need to be reduced or increased, it all depends on your oven. How to check the doneness of baked goods? Pierce the dough with a dry wooden skewer. If it comes out dry, then the apple charlotte is ready. Carefully remove the finished cake from the mold and cool. Sprinkle with powdered sugar. Enjoy your tea!
