Gordon Ramsay's Classic Shepherd’s Pie Recipe

Appetizing, original, satisfying, a holiday every day! Gordon Ramsayʼs classic shepherdʼs pie is a traditional British dish. In essence, it is an ordinary casserole, which consists of mashed potatoes and minced meat with vegetables. The famous chef Ramsay offers his own version of cooking.

Ingredients (6 portions)

Basic:

Garlic 2 clove
Olive oil 2 tbsp
Salt to taste
Ground hot pepper to taste
Egg yolks 2 pc
Potato 1 kg
Tomato paste (with a slide) 1 tbsp
Carrot (large) 1 pc
Bulb onions (medium sized or 1 fairly large onion) 2 pc
Red wine 250 ml
Minced meat (lamb) 500 g
Parmesan (grated, 4 tbsp. l.) 100 g
Rosemary to taste
Thyme, thyme 30 g
Worcestershire sauce 2 tbsp
Chicken bouillon 400 ml

How to make classic shepherdʼs pie? Prepare your food. The minced meat in the original recipe is taken from lamb, but you can use any other one that is available. If you don’t like some spices or couldn’t find them, don’t worry — add what you like and what you have on hand. You can replace Worcestershire sauce with soy sauce or omit it altogether. Any hard cheese will do.

Prepare the puree. How to make puree? Wash the potatoes, peel them, cover with water and cook on low heat.

At the same time, prepare the meat sauce. How to make sauce? Heat a frying pan with a little olive oil over medium heat. Place the minced meat in the pan and, constantly stirring it with a spatula or spoon, fry until the color changes.

Peel the onions and carrots and cut into small cubes. You can grate the carrots.

Add chopped vegetables to the frying pan with the minced meat and stir.

Add tomato paste, Worcestershire sauce and red wine (I used dry). Stir well and let the wine evaporate.

Crush the garlic cloves with the flat side of a knife and chop them, pick the leaves from the thyme sprigs, also tear off the leaves from the rosemary and chop them finely. Add chopped garlic and herbs to the minced meat.

Pour in chicken broth and stir. Add salt and pepper.

Boil the meat sauce over medium heat until thickened (this process took about 15-20 minutes for me). The liquid should be reduced by more than half.

While the meat sauce is simmering, return to the potatoes. Drain the water from it (you can pour some of the water into a small container and reserve it in case the puree turns out too dry) and mash with a masher.

Add to it half the total amount of grated Parmesan and 2 egg yolks. Knead everything thoroughly again. Taste the puree for salt and add if necessary.

You should get a smooth and homogeneous puree; if suddenly there is little moisture in the potatoes and the puree turns out to be quite dense, then you can add a little water in which the potatoes themselves were boiled.

Assemble the shepherdʼs pie. Place the prepared meat sauce on the bottom of the baking dish. By the way, my form measures 26x20cm.

Place mashed potatoes on top. Use a fork to create a pattern on the potatoes.

Top the potatoes with the remaining grated Parmesan.

Preheat the oven to 180°C. Bake the shepherdʼs pie for 20-30 minutes until golden brown.
