Ruddy and fragrant. They will disappear from the table in one minute! Pies fried in oil are a favorite dish for many; they are especially good hot, straight from the frying pan. They can be prepared with any filling, both salty and sweet. The dough is kneaded with water and yeast, it is fluffy and easy to work with.

Wheat flour 400 g

How to make fried pies in oil in a frying pan? Prepare ingredients for yeast dough. The amount of flour given is approximate, it may take more or less, you will look at the dough. Take dry fast-acting yeast. Vegetable oil — odorless. Instead of water, you can use milk or a mixture of water and milk.

Take a deep bowl and pour warm water into it. The water should be just warm, not hot, so that it does not scald the living organisms of the yeast. Add salt and sugar to the water and mix them.

Pour in vegetable oil.

Pour the yeast into a glass of flour and stir. Sift this glass into the liquid ingredients. Then sift the second one. Stop adding flour for now. Start kneading the dough first with a fork, then with your hands.

Knead the dough and add more flour if necessary. The dough will gradually become homogeneous, smooth, and it will practically stop sticking to your hands. But do not overdo it with flour — the dough should remain soft. I ended up using less flour.

Cover the bowl with flour with a towel and leave in a warm place for about 1 hour. During this time, the dough will double in volume.

Place the dough on the table and divide into 12 parts. To make the pieces even, do this — first cut in half, each half in half again, and the quarters into 3 parts. Roll each piece of dough into a ball. If necessary, add flour to the table.

Form the pies. To do this, roll each ball into a thin circle and place the filling in the center. I have this jam. To be on the safe side, you can add a little starch to it so that the jam does not leak out during frying. Pinch the pie, sealing the edges tightly. Make pies from all the ingredients in this way.

Take a frying pan with a thick bottom. It is not necessary that it have a non-stick coating, the main thing is a thick bottom — due to this, the pan retains heat for a long time and fry evenly. I have a cast iron one. Pour vegetable oil into the pan for frying. There should be enough of it so that the level reaches the middle of the pies. Heat oil over high heat. Check doneness with a wooden skewer — bubbles will form around it. Place the pies.

Fry the pies over medium heat. First until golden brown on one side, then turn over to the other.
