How to bake chocolate brownie cookies? Very easy and fast. To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. Cocoa — high-quality, preferably alkalized. You need a large, selected egg. Bitter chocolate with cocoa content of at least 72%.

In a saucepan, combine the chocolate broken into pieces with butter. Place over low heat and melt while constantly stirring. Instead of using the stovetop, you can melt the mixture in the microwave. Cool the mixture to room temperature.

Using a mixer, beat the egg with sugar until light and the mass increases 3-4 times.

Add the cooled chocolate mixture and beat again until smooth.

Sift flour, cocoa and baking powder into a separate bowl.

Pour the flour mixture and salt into the dough. For the recipe, it is better to use regular table salt, not coarse salt, not sea salt. Since the cookies are baked for only 12 minutes, large salt crystals may simply not have time to melt and will crunch on your teeth. Salt adds a flavor contrast to cookies, but if you donʼt like the combination of sweet and salty, then itʼs better not to add salt at all.

Knead into a homogeneous soft dough. I kneaded with a silicone spatula. If the dough begins to easily form into a lump, sticking to the sides of the bowl, then it is ready. If necessary, you can add a little more flour.

If the dough is too sticky, put it in the refrigerator for 10-15 minutes.

Roll the dough into 8 identical balls weighing 45-50 g. Flatten each ball with your hands, giving the shape of an even round cookie.

Place the cookies on a parchment-lined baking sheet at a distance of 5-6 cm from each other, as the cookies will increase in size during baking. Bake cookies in an oven preheated to 180°C for no longer than 12 minutes. The inside of the cookies should remain slightly moist and the outside should be crispy.
