How to make potato pies with kefir fried in a frying pan? Prepare your food. Pre-clean the vegetables and rinse with water. Remove kefir and eggs from the refrigerator in advance — the dough is better mixed with warm ingredients. The fat content of kefir does not matter.

First of all, boil the potatoes. How to cook potatoes? Cut it into pieces, put it in a saucepan, and fill it with clean cold water. Add salt and cook over low heat. After boiling, cook the potatoes for 20-30 minutes, depending on the variety, until soft — when pressed with a spoon, a piece should break easily.

While the potatoes are cooking, prepare the dough. How to make the dough? Pour salt, sugar and soda into kefir and mix.

Add vegetable oil and raw egg, stir. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

Add sifted flour and knead the dough. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. It is better to add flour in portions, kneading the dough after each. The dough should become homogeneous, elastic, but remain soft. Cover the finished dough with a towel or film and leave to rest for 15 minutes.

Meanwhile, go back to preparing the filling. Finely chop the onion.

Fry it in vegetable oil until golden brown. To ensure that the onion cooks evenly and does not burn, fry it over low heat with constant stirring.

Drain the water from the finished potatoes, and specially pour out a small amount of it — it will be needed to regulate the thickness of the filling. Mash the potatoes and mix them with onions. If the filling turns out too stiff, pour a little of the reserved water into it. Taste the filling — it should be delicious.
