Recipe instructions

Step 1

Step 1
How to bake quiche with chicken and mushrooms? Prepare the necessary ingredients. Sift the flour. The butter must be chilled. Turn on the oven to 200 degrees in advance. Cut the butter into small cubes and place in a bowl with flour. Chop the mixture with a knife or grind it into fine crumbs with your hands. You can grate cold butter on a coarse grater, constantly dipping it into the flour. Add the egg and knead the dough. Do not knead for a long time, otherwise the dough will turn out tough.

Step 2

Step 2
The dough turns out smooth, elastic, soft. Place it in a heat-resistant form (diameter 24 cm) and spread it over the form with your hands, forming sides. Prick the entire surface of the dough with a fork to prevent it from puffing up during baking. Bake the crust in an oven preheated to 200 degrees for about 10 minutes until golden. Remove the mold and cool.

Step 3

Step 3
Prepare the necessary ingredients for the filling. Wash and dry the chicken with paper towels. Cut it into small pieces. Wash the champignons. Place them on a towel to absorb excess moisture. Peel large mushrooms (wash small ones enough). Cut them into small cubes. If desired, you can add finely chopped onions to the filling.

Step 4

Step 4
Heat refined vegetable oil with a high smoking point in a frying pan. Fry the chicken with constant stirring until golden brown. Add mushrooms to the chicken, add 2-3 tablespoons of boiled water and salt. Simmer over low heat until the liquid has evaporated. Turn off the heat and let the filling cool.

Step 5

Step 5
Prepare the necessary ingredients for filling. Place sour cream in a separate container. Sour cream can be replaced with cream of any fat content. Add a pinch of salt and eggs. Lightly whisk the mixture until smooth. Grate hard cheese (such as “Russian”) on a coarse grater.

Step 6

Step 6
Place the mushroom and chicken filling into the oven-dried shortcrust pastry base. Level the surface. If desired, you can also place cherry tomato halves cut side down.

Step 7

Step 7
Pour sour cream filling evenly over the top of the pie. Sprinkle with grated cheese. Send the pan with the pie back to the oven, preheated to 200 degrees. Bake for approximately 30-40 minutes. Focus on the features of your oven! Baking time and temperature can be changed. When the cheese has melted and the dough has browned, you can take out the baking dish.

Step 8

Step 8
Let the finished quiche with chicken, mushrooms and cheese cool slightly in the pan. Then carefully transfer to a flat dish. Top with curly parsley leaves or sprinkle with finely chopped green onions. Bon appetit!
