Letʼs prepare the ingredients. Still, more tender gubadiya is obtained from yeast dough. It combines perfectly with fillings for gubadia. Therefore, prepare yeast dough.

Put a tablespoon of sugar, a tablespoon of flour into a glass, add dry yeast and pour half a glass of warm water. Stir and leave the mixture in a warm place for 15 minutes. In the meantime, prepare the other ingredients. Melt the butter in a water bath and cool to room temperature. We heat the milk to a temperature of about 35 degrees, you can do this in the microwave.

Sift the flour. Pour the yeast mixture into a deep bowl, beat in a chicken egg, add melted butter, warm milk, and salt. Mix. Add sifted flour. Add it in parts so that the dough takes as much flour as it needs. It may take a little more flour.

Letʼs start preparing the court. Place cottage cheese in a metal cup and fill it with milk. We put it on fire. When the mixture boils, reduce the heat to medium and cook, stirring the mixture so that it does not burn. The cottage cheese will first begin to melt and the liquid will evaporate.

When the mass begins to thicken, add sugar and butter, mix and simmer again until the mass begins to darken and thicken.

When there is practically no liquid left, turn off the heat and leave the cup on the stove to dry the court.

Wash the rice and boil until tender in water with the addition of sugar (a tablespoon) and salt (a pinch). The main thing is not to overcook the rice; it should be crumbly.

For the filling, take dried fruits such as raisins and dried apricots; if desired, you can add prunes. Wash the dried fruits well, add hot water and leave for 10-15 minutes until they steam and become soft. Drain the raisins and dry the dried apricots on a paper towel. Letʼs make streusel for topping the pie. In a bowl, grind the flour into crumbs with a piece of butter, you can add sugar to taste.
