Pumpkin Cottage Cheese Pie

Curd dough and juicy spicy filling. Light pie with pumpkin filling. Of course, this baking is not for everybody, but I think there are a lot of people who love pumpkin. You can puree the cottage cheese for the dough, but I like it better when the dough feels like soft curd flakes. The pie is soft, juicy, and the pumpkin filling makes it healthy.

Ingredients (12 portions)

Basic:

Eggs 1 pc

For dough:

Eggs 1 pc
Sugar 50 g
Vegetable oil 2.5 tbsp
Cottage cheese 70 g
Wheat flour 130 g
Baking powder 1 tsp

For filling:

Sugar to taste
Pumpkin 360 g
Butter 10 g
Raisin 25 g
Lemon juice 2 tbsp
Lemon zest 1 tsp
Ground cinnamon to taste

Ingredients for the dough.

Beat eggs with sugar and salt.

Add cottage cheese, mix.

Pour in vegetable oil and mix.

Add flour sifted with baking powder.

Knead the soft dough, wrap it in film and put it in the refrigerator for 30 minutes.

Grate the pumpkin on a coarse grater and rinse the raisins.

Simmer the pumpkin with butter until soft. If necessary, add a couple of tablespoons of water.

Remove the zest from the lemon and squeeze out the juice.

5 minutes before the pumpkin is ready, add lemon juice, zest, sugar, and cinnamon. Mix. Let the filling cool.

Cover the form with oiled parchment. Roll out most of the dough into a round layer about 0.5 cm thick, transfer it to the mold, and form the sides.

We spread the filling.

Roll out the second part of the dough in the same way and close the pie, pinch the edges well. You can cut a hole of any shape in the center or prick it with a fork.

Brush the top of the pie with beaten egg.

Bake in a preheated oven at 180 degrees. 25-30 minutes until golden brown. Let the pie cool, remove from the pan and serve. Enjoy your tea!
