Ingredients (5 portions)

Basic:

Salt 0.5 tsp
Sugar 1 tbsp
Wheat flour 230 g
Butter 40 g
Milk (plus a tablespoon for greasing) 100 ml
Eggs (one for dough, one for greasing) 2 pc
Vegetable oil 1 tbsp
Dry yeast (fast-acting) 1 tbsp

Recipe instructions

Step 1

Step 1
How to bake soft pies with milk in the oven? Prepare all the necessary ingredients. How to make soft dough for pies in the oven? Heat the milk in a saucepan or iron bowl, add a piece of butter there so that it melts — when the butter is almost melted, turn off the heat.

Step 2

Step 2
Pour the milk and butter into a deep bowl, add salt, sugar and beat in the egg, which can be beaten with a whisk first. Wash the egg with baking soda first, as there may be harmful bacteria on its surface.

Step 3

Step 3
Add flour sifted through a sieve and mixed with instant yeast. You will learn the specifics of working with different yeasts and how to replace them by reading the article, the link is at the end of this recipe.

Step 4

Step 4
Start kneading with a spoon or a mixer with the dough attachment. I used a mixer. When the dough comes together, we will mix it with our hands.

Step 5

Step 5
Grease your hands with vegetable oil and continue kneading the dough — knead on the table for 5-7 minutes, it should become elastic and pliable. Then put the dough back into a bowl greased with vegetable oil, forming it into a bun. Since flour varies, you may need a little less or more. Read more about the properties of flour in the article at the end of the recipe. Cover the bowl with cling film and place the dough in a warm place for about 1-1.5 hours to rise.

Step 6

Step 6
Divide the risen dough into several equal parts — I got 7 pieces for medium-sized pies. Roll them into balls. The dough should turn out so that you don’t need to sprinkle flour on the table, but if necessary, you can add a little flour.

Step 7

Step 7
Mash each ball into a cake with your hands or use a rolling pin. At this stage, you can lay out the filling that you have planned. This dough is not sweet, so it will go well with both sweet and savory fillings.

Step 8

Step 8
Pinch the edges to form an oblong pie.

Step 9

Step 9
Place the pieces on a baking sheet lined with baking paper or parchment — no need to grease. You can place the pies with the seam up or down — itʼs at your discretion. Leave the pies to proof for 20 minutes under cling film.

Step 10

Step 10
Then brush the pies with a mixture of beaten egg and a tablespoon of milk. This will give the pies an appetizing rosy color.

Step 11

Step 11
Place the baking sheet in an oven preheated to 180 degrees and bake for about 15-20 minutes until the desired degree of browning. Allow the finished, delicious, soft yeast pies to cool slightly and serve. Bon appetit!
