Cheesy Herb-Stuffed Flatbreads

Delicious, appetizing, made from simple ingredients, a quick snack! Kutaby with herbs and cheese are thin dough flatbreads with aromatic filling. In this recipe, the dough for them is brewed with boiling water. This dough is more elastic and soft, it can be rolled out thinly and will not tear during baking.

For filling:

Hard cheese 120 g
Green onions 20 g
Dill 20 g
Sorrel 10 g

How to make kutabs with greens? Prepare your food. In addition to hard cheese, you can use suluguni or Adyghe cheese. If you use pickled cheese, you don’t need to add salt to the filling. You can take any seasonal greens: spinach, basil, nettles, cilantro, mint, lettuce.

First prepare the dough. How to make the dough? Mix flour with salt, then sift into a bowl.

Pour boiling water into the flour and knead the dough. First with a spoon, then, when the dough stops burning, with your hands. If the dough turns out too thin, add more flour; if it’s too stiff, add a little more boiling water. Knead the dough until smooth and homogeneous. Wrap the dough in cling film and leave to rest for half an hour. During this time, gluten will develop in the dough and it will become soft and elastic.

While the dough is resting, prepare the filling. How to make the filling? Rinse the greens thoroughly. If there are thick branches, remove them. Dry the greens well and chop finely.

Grate the cheese on a coarse grater.

Place the prepared herbs and cheese in a bowl and stir. Taste the filling and add salt if necessary.

Meanwhile, the dough is ready. Roll it into a sausage, then divide it into 6 equal parts.
