Rinse the apricots well under running water and dry them by placing them on a paper towel. We donʼt need excess moisture. Then cut the apricots in half and remove the pits. You can leave them like this or cut them into smaller slices, but I didn’t do this; we like large pieces of fruit in the charlotte.

Break the eggs into a bowl and beat with a mixer. Begin beating at medium speed, gradually adding sugar. I advise you not to beat them at high speeds, because bubbles of different sizes will form, and during baking, large ones will begin to burst, which is why our charlotte will fall off. Beat the eggs until white and double in volume.

Add sifted flour and baking soda, which must be quenched with lemon juice. Gently mix the dough with a spatula, it is better to use a silicone one, it will not disturb the structure of the beaten eggs. Do not stir for long, you just need to stir the flour until smooth. Add chopped apricots to the dough and stir. If you want to arrange the fruit beautifully, then put it straight into the mold; we like it to be evenly distributed throughout the charlotte.

Grease the mold with butter. Pour the dough into it and place in an oven preheated to 200 degrees, bake for about 30 minutes. Check readiness with a toothpick — if you stick it in and take it out of the charlotte, it should be dry. Cooking times are approximate; be guided by the operating characteristics of your oven.
