How to bake an Ossetian pie with potatoes and cheese in the oven? Prepare all the necessary ingredients. Letʼs start by preparing the yeast dough. We will knead the dough with milk to make it especially soft and manageable. Pour a glass of warm milk into a bowl. Add sugar and a tablespoon of wheat flour, stir until the mixture is homogeneous in consistency. Add dry yeast, stir again and leave the mixture for 15 minutes in a warm place.

A yeast foam should form on the surface of the mixture, which means the yeast has been activated, everything is done correctly. If this does not happen, then you need to use other yeast; baking will not work with this. Add salt to the bowl with the yeast mixture and pour in the vegetable oil. Stir. Add sifted wheat flour in parts.

Stir the dough with a spoon, then turn the dough out onto a floured surface. Knead into an elastic dough that slightly sticks to your palms. Place it in a bowl, cover it with cling film on top and place in a warm place for 1-1.5 hours to rise.

Wash the potatoes with a brush in running water, peel and cut into several large pieces. Place all the potatoes in a saucepan and cover with water. Put it on fire. Add a pinch of salt. Boil the potatoes until done. Drain off some of the water in which the potatoes were boiled. Make mashed potatoes using a potato masher and add butter. Let the mashed potatoes cool slightly.

Grind the cheese with a knife or grate it on a coarse grater and place it in a bowl with mashed potatoes, stir, you can add a little fresh finely chopped dill and parsley for flavor. Add salt and ground black pepper to taste and stir. The filling is ready. If desired, you can add other types of cheese, for example, any hard cheese, it will make the filling even more aromatic and tastier.

Knead the dough and begin to form the pie. Divide the dough into several parts depending on the size of the mold and the desired number of pies. Roll out part of the dough into a thin flat cake. Place the filling in the center. Seal the edges of the flatbread to form a bun. Again, carefully, so as not to tear the dough, roll it out with a rolling pin into a thin cake.
