Quick Berry Butter Dough Pie

The pie is prepared in no time, justifying its name. The berries can be gently folded into the dough, but during baking the dough rises and the heavy berries sink, so mixing occurs during the baking process.

Ingredients (8 portions)

Dough:

Wheat flour 150 g
Butter 100 g
Sugar 100 g
Eggs 3 pc
Vanilla sugar 1 tsp
Baking powder 0.5 tsp
Salt 2 g

Filling:

Sugar 1 tbsp
Berries 350 g
Starch 1 tsp

Filling. To prepare the berry filling we will need: a mixture of any berries (I use white, red and black currants and gooseberries; you can also use cherries, cherries, strawberries, raspberries, blueberries and other berries to taste); sugar and flour.

Sort the berries, wash and dry. Sprinkle the berries with sugar and starch. Starch can be used either from potato or corn starch. Corn is more neutral in taste and is practically not felt in the pie. But you need to take 1.5 times more corn starch than potato starch, i.e. 1 tbsp. l.

Mix everything carefully, being careful not to crush the berries.

Dough. To prepare the dough we will need: flour, soft butter at room temperature, sugar, eggs, vanilla sugar, baking powder and salt.

Combine soft butter with sugar and beat with a mixer until fluffy.

Add eggs one at a time, beating until smooth each time.

Sift the flour with baking powder and salt and add in parts to the dough.

Mix everything until smooth.

Place the dough in a baking dish and smooth it out. If the mold is silicone, like mine, you don’t need to grease it with oil.

Distribute the berries evenly on top. Place the pie in an oven preheated to 180°C for about 40 minutes.

Cool the finished pie, remove from the mold and cut into pieces. Serve with tea, coffee, milk, cocoa or chicory. Bon appetit!
