Plum Nut Shortbread Pie

This pie is equally delicious warm or chilled. Crumbly shortbread dough, favorite nuts and halves of baked plums — this is just a wonderful combination. I found the dough especially interesting. Iʼve never done this before.

Ingredients (8 portions)

Basic:

Wheat flour 300 g
Cottage cheese 250 g
Butter 100 g
Baking powder 1 tbsp

Filling:

Plums 600 g
Walnuts 80 g
Sugar 1 tbsp
Powdered sugar 1 tbsp

Prepare the ingredients. To prepare the cottage cheese dough we will need: cottage cheese (preferably lumpy, not wet; I took wet cottage cheese in briquettes and when mixing with butter crumbs, large lumps began to form), flour, sugar, cold butter; baking powder.

Mix flour with sugar and baking powder.

Divide the flour mixture into two equal parts. Add cottage cheese to the first part of the flour mixture.

Grind it with your hands until you get fine crumbs.

Add cold butter cut into pieces into the second part of the flour mixture and grind everything into crumbs.

Combine the two types of crumbs and mix gently, being careful not to crush the crumbs so that they do not form a lump. When mixing, I ended up with larger crumbs than I wanted. While the filling is being prepared, it is better to put the crumbs in the refrigerator.

Filling. To prepare the filling we will need: plums (preferably dense, not soft); any nuts and powdered sugar.

Wash the plums, cut them in half and remove the pits.

Chop the nuts with a knife. In the absence of others, I had pistachios, but you can use any. Walnuts and hazelnuts are combined with plums.

Pour the resulting crumbs into a greased and floured baking dish (Ø 26-28 cm). Smooth out.

Place chopped nuts on the dough.

Place plum halves on top.

Sprinkle plums with 1 tbsp. l. Sahara. Bake the pie for about 35 minutes in an oven preheated to 180°C.

Cool the cake slightly, remove from the pan and sprinkle with powdered sugar. Serve the pie and cut into pieces. Bon appetit!
