Quick and Easy Apple Sponge Cake

The pie is prepared quickly — and delicious pastries are ready for tea. Sponge cake with apples or classic charlotte consists of four required ingredients: flour, sugar, eggs and apples. Vanilla sugar and baking powder are added as desired. If you beat the eggs correctly, you wonʼt need baking powder at all.

Basic:

Sugar 180 g
Apples 3 pc
Wheat flour 150 g
Eggs (large) 4 pc
Vanilla sugar 1 tbsp

Prepare the ingredients. To prepare sponge cake with apples we will need: flour; sugar; eggs; vanilla sugar and apples.

In a deep bowl, combine eggs, sugar and vanilla sugar. Beat with a mixer until fluffy. It is very important not to overbeat the eggs. The mass should not be white and very dense. If the mass turns out to be very dense, this means that almost all the air has come out of the eggs and such a sponge cake will either not rise at all or rise very slightly.

Sift the flour and add it to the dough in parts.

Mix the flour with a mixer at low speed.

Wash the apples, dry them, remove stems and seeds. If desired, you can peel the peel. Cut the prepared apples into slices.

Place apple slices on the bottom of a well-greased baking dish (Ø 24-26 cm).

Pour the batter evenly over the top of the apples.

Place the pie in an oven preheated to 180°C for about 40-45 minutes. And let the cake stand in the cooling oven for another 10 minutes. It is better not to open the oven door for the first 35 minutes, otherwise the biscuit will fall off. A crispy, brittle crust should appear on the surface of the finished pie.

If desired, you can turn the pie over so the apples are on top. But I don’t do this with this particular pie recipe, otherwise the crispy crust will quickly get soggy. Bon appetit!
