Fruit and Cranberry Charlotte Pie

Cranberries add sourness to the dish and combine with apples. Sometimes in the evening you want to urgently cook something delicious, some kind of sweet pie. And usually the first thing that comes to mind is charlotte. There is usually always a set of products for it in the house. But for the filling you can use any fruit or berries.

Basic:

Sugar 200 g
Apples (apples or pears) 2 pc
Wheat flour 200 g
Eggs 4 pc
Cranberry 100 g
Vanilla sugar 1 tbsp

Prepare the ingredients. To prepare charlotte with apples and cranberries we will need: for the dough — flour; eggs; sugar; vanilla sugar; for filling — cranberries; apple. I prepared exactly half the portion for a mold 16 cm in diameter. And I give the products for a shape of 20-24 cm.

Combine eggs with sugar and vanilla sugar.

Beat everything with a mixer until smooth. You should get a fluffy mass. You donʼt need to beat the eggs for very long. If you overbeat the eggs, the sponge cake will not rise. The mass should lighten, but retain a yellowish tint. A completely white mass is a sign of overbeaten eggs, from which all the air has gone. In this case, the biscuit will not rise and will not be fluffy even with baking powder. If whipped correctly, the mass will increase 3 times, and many bubbles will appear on the surface.

Sift the flour.

Add flour to beaten eggs. Beat again until smooth. The consistency of the dough should be like thick sour cream. Wash the cranberries and dry them. Place the berries in the dough and mix gently.

Wash the apples, dry them, remove the core and cut the fruit into slices.

Pour half of the cranberry batter into a greased baking dish.

Place apple slices on top.

Pour in the remaining dough. Bake the charlotte in an oven preheated to 180°C for about 40 minutes. It is advisable not to open the oven door during baking.
