Recipe instructions

Step 1

Step 1
How to bake a sweet jellied kefir pie with berries in the oven? Prepare the necessary ingredients. The fattier the kefir, the tastier the pie will be. But one percent kefir will also work very well. Berries can be used both fresh and frozen. Remove frozen berries from the refrigerator to let them thaw a little. Wash the eggs and beat them into a bowl. Add sugar and a pinch of salt. This is done to improve the taste of the future pie.

Step 2

Step 2
Pour kefir into a bowl.

Step 3

Step 3
Using a mixer for 5-7 minutes at medium speed, beat all ingredients into a homogeneous mass saturated with air bubbles.

Step 4

Step 4
Add soda and vanilla sugar. Vanilla sugar can be replaced with vanillin. Read how to do this correctly in a separate article at the link after the recipe. There is no point in extinguishing soda with additional vinegar or citric acid, since it will be perfectly extinguished with kefir. Read about all the nuances of working with soda in a separate article, link at the end of the recipe.

Step 5

Step 5
Add wheat flour, sifted through a sieve, preferably twice. This way it will be saturated with oxygen, and the finished cake will be more airy.

Step 6

Step 6
Mix the dough again with a mixer at medium speed for 3-4 minutes. Speed is average. The result should be a very airy mass, air bubbles very actively coming to the surface.

Step 7

Step 7
Pour the dough into the mold, after greasing the bottom with sunflower oil. Read about how to choose a baking dish in a separate article at the link at the end of the recipe.

Step 8

Step 8
Distribute slightly defrosted berries on top in a chaotic manner. Bake the pie for 40-45 minutes. You can choose the right parchment paper by reading a separate article about the features of parchment, the link is at the end of the recipe. You can check the readiness of the cake by pricking it in the middle with a wooden toothpick. If it is completely dry (no dough residue), then the cake is ready. It should also brown nicely.
