Recipe instructions

Step 1

Step 1
How to bake a spicy winter New Yearʼs pie? Prepare your food. Beat an egg into lukewarm milk (30°C) and mix gently with a whisk. Add sugar and yeast and stir until dissolved. Pour in vegetable oil and mix with a whisk. Start adding the flour and salt sifted through a sieve in parts. Knead the dough with a spoon and then continue with your hands. The dough should be a little sticky. Cover it with a towel and place it in a warm place for 1-2 hours.

Step 2

Step 2
Wash the apples, dry and cut into small cubes. Place them in a saucepan and fry lightly in butter for a couple of minutes. Then add sugar, cinnamon, stir and continue frying until the sugar begins to caramelize. Remove the saucepan from the heat.

Step 3

Step 3
Wash the orange and grate the colored part of the entire orange peel on a fine grater. Extract the juice from the pulp using a manual juicer. Rinse the lingonberries under water, pour 250 g into a clean saucepan. Add honey, zest, wine and orange juice. Place the saucepan on the fire, stir and cook the sauce for 10 minutes. Then grind half of the sauce in a blender and return it to the saucepan. Cook the sauce for another 15 minutes. Transfer the hot sauce to the apples.

Step 4

Step 4
Add cherry jam to the berry-fruit mixture. It is advisable that the jam be made with whole berries. Stir the contents of the saucepan. The pie filling is ready.

Step 5

Step 5
During this time, the dough should have risen at least 2 times. Sprinkle the dough with a little flour and knead it to release excess carbon dioxide. Keep in mind that flour from different manufacturers has different properties and you may need less or more of it when kneading.

Step 6

Step 6
Cut off most of the dough, leaving some dough to create a mesh on the pie. Roll out the large portion into a large circle and transfer it to a round baking pan greased with vegetable oil. Form the bottom and sides of the future pie.

Step 7

Step 7
Place the filling in the dough and distribute it evenly throughout the pie, sprinkle the remaining lingonberries (50 g) on top.

Step 8

Step 8
Roll out the remaining dough into a small layer and cut it into narrow strips. Place these strips on top of the pie creating a mesh. Carefully fold the sides of the pie. Brush the mesh and the side of the pie with beaten egg. Bake the pie in an oven preheated to 180 degrees for about 25-30 minutes. The times are approximate, be guided by the operating characteristics of your oven. Let the finished pie cool and serve. Bon appetit!
