Oven-Baked Apricot and Plum Fruit Pie

You can use any fruit you like. The simplest and fastest pie with a fragrant sweetish tender dough and a sweet and sour fruit top. A wonderful combination that both you and your loved ones will appreciate. We will prepare it with apricots and plums, but you can use any other fruit.

Prepare the necessary ingredients for the dough. The eggs and butter should be at room temperature, so remove them from the refrigerator in advance. It is better to get the butter 2-3 hours in advance so that it is completely thawed not only on the outside, but also on the inside. I get the oil in the evening. Use premium flour.

Combine the eggs with sugar and beat with a mixer until fluffy. If you wish, in addition to regular sugar, you can add another 1/2 tsp. vanilla sugar.

Add soft butter at room temperature and beat again. You shouldn’t beat for a long time to achieve homogeneity — you won’t achieve it anyway, and you can overbeat the eggs and the dough won’t rise as needed.

Mix flour with baking powder and sift into the dough. Mix everything with a mixer at low speed.

You should get a soft, fragrant, homogeneous dough.

Prepare all the necessary ingredients for the filling. You can use any fruit you like: apples, pears, peaches, nectarines. I took assorted apricots and plums. In addition to apricots, I also took plums for sourness. Wash all fruits thoroughly and dry.

Mix sugar with cinnamon.

Cut the apricots in half and remove the pits. You can leave the fruit in halves or cut them into quarters.

Also remove the seeds from the plums and cut the pulp into slices.

Place the dough in a baking dish lined with parchment and greased with vegetable oil. You can use a mold diameter from 20 to 26 cm. The smaller the diameter of the mold, the higher your cake will be. I have a diameter of 20 cm.

Place plums and apricots on the dough. You can simply sprinkle the fruit mixture evenly on top or make a specific pattern.

Sprinkle the cinnamon sugar mixture on top of the fruit. Place the pie in an oven preheated to 180°C for 40-45 minutes. The exact time depends on the features of your oven. If the fruit begins to darken and the dough is not yet ready, cover the pan with foil.
