Baked Duck Breast with Apples and Potatoes

Basic:

Garlic 5 clove
Salt to taste
Sugar 0.5 tsp
Ground black pepper 0.5 tbsp
Apples 2 pc
Potato 4 pc
Vegetable oil 1 tbsp
Paprika 1 tbsp
Greenery to taste
Italian herbs 1 tbsp

How to bake duck breasts with apples and potatoes in the oven? Prepare all the ingredients specified in the recipe. Apples are suitable sweet and sour and sweet varieties. The amount of garlic can be increased or decreased according to your taste.

Add spices, salt and sugar to a small deep container. The set of seasonings can be anything you like. I used ground sweet paprika, black allspice and herbs de Provence. Mix everything.

Peel the garlic and pass the cloves through a press or garlic press. Remove any remaining feathers from the duck breasts, if any. Rinse the meat under running cold water and dry with paper towels. Rub the breasts on all sides with garlic.

Divide the seasoning mixture into two parts — we will use one for meat, the second for apples and potatoes. Rub the duck breasts all over with seasoning. Leave to marinate for a while. 30-60 minutes will be enough.

Meanwhile, prepare everything else. Peel the potatoes and rinse. Wash and dry the apples. Cut the potatoes and apples into slices, as in the photo. Place in a convenient container. Pour in 1 tbsp. vegetable oil and mix everything well.

Add the remaining seasoning and mix everything thoroughly so that every piece is covered in aromatic spices.

Place apples with potatoes and duck breasts in an even layer for baking. Tie the sleeve on both sides and make punctures with a toothpick on the surface of the sleeve. Place the duck in a cold oven and bake until done. Cooking time and temperature depend entirely on the capabilities of your oven. I cooked at 200 degrees for about 1 hour and 20 minutes.
