Baked Potato Zrazy with Mushroom Filling

Surprise your loved ones with an unusual serving of mashed potatoes). Zrazy is a dish of Belarusian, Polish and Ukrainian cuisine and is a cutlet stuffed with meat, mushrooms and/or vegetables. To prepare potato zrazas, mashed potatoes and various fillings are used. I suggest preparing potato zrazy stuffed with onions and champignons. Itʼs very tasty and simple.

Ingredients (3 portions)

Basic:

Onion 1 pc
Salt 0.7 tsp
Eggs 1 pc
Potato 6 pc
Champignon 200 g
Sunflower oil (1 tablespoon for frying mushrooms and onions and 1 tablespoon for greasing the baking sheet) 2 tbsp
Flour (into mashed potatoes to thicken) 2 tbsp

Letʼs prepare the ingredients and start cooking right away.

Peel the potatoes. For faster cooking, potatoes can be cut into pieces. Cook the potatoes with salt until tender.

Finely chop the onion.

Clean the mushrooms and cut into pieces.

Fry the onion in sunflower oil until golden brown.

Add the mushrooms to the onions and continue to fry until the mushrooms are ready.

Using a potato masher, turn the finished potatoes into puree. Add a raw egg to the puree. The puree should be thick enough to form into balls. To give the puree the desired consistency, use flour.

Letʼs start cooking right away. To do this, form 2 tablespoons of cooled mashed potatoes into flat cakes and put 1 teaspoon of champignon and onion filling inside. Carefully pinch the edges and give the zraza the desired shape. Zrazy can be in the shape of a ball, flat cake or oblong.

Place the finished zrazy on a baking sheet lined with parchment and greased with sunflower oil. Bake the zrazy in the oven for 30 minutes at 180 degrees.
