Basic:

Garlic 2 clove

Water 100 ml
Potato 1.4 kg
Sour cream (if desired, you can replace 50g of water) 100 ml
Carrot 1 pc
Bulb onions 1 pc

How to bake a rabbit with potatoes in the oven? Prepare all ingredients. The back part of the rabbit is better suited for baking; it is more tender and fattier. Leave the top part for first courses or stewing. Use any spices to suit your taste. If you are using ready-made mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt, take this into account, otherwise you risk oversalting the dish. This time I only used ground black pepper.

Remove the rabbitʼs entrails, if any. Carefully inspect the surface for the presence of fur residues and remove. Rinse the carcass well under running water. Cut the rabbit into portions using a sharp knife. You should not use an ax because bone fragments may get stuck in the meat. Cut out the pieces of fat — they will also come in handy. Rub the rabbit pieces with salt and spices and leave to marinate for 15 minutes.

While the rabbit is marinating, start preparing the vegetables. Wash and peel the potatoes, carrots and onions well. Itʼs time to turn on the oven and preheat to 180 degrees.

For baking, take a baking dish with high sides. I have an oval ceramic mold about 30x20 cm. Grease the bottom and walls with vegetable oil. Cut the potatoes and carrots into large oblong pieces and place in a mold. Cut the onion into half rings. Add to baking dish and spread evenly. Add a little salt. To avoid irritating the mucous membranes of your eyes when cutting onions, rinse the onion and knife with cold water.

First, spread the pieces of fat evenly over the potatoes. Then place the meat parts, slightly pressing them into the potatoes.

Prepare the fill. Peel the garlic, rinse and chop. Mix water, sour cream (if using), garlic and a pinch of salt.

Pour into the dish in a thin stream to ensure even distribution. The filling should not occupy more than half the volume of the dish. If necessary, add water or use not all of the prepared filling.

Cover with foil and place in the preheated oven on the middle rack.

Bake for 40 minutes. Remove the foil and continue baking for about 1 hour until the rabbit is browned. The exact time depends on the capabilities of your oven.

During baking, you can turn the rabbit pieces over so that it cooks evenly and does not dry out. If the rabbit is browned and the potatoes can be easily pierced with a fork, the dish is ready.
