Oven-Stewed Duck with Potatoes and Meat

How to make potatoes with meat in a duckling stewed in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. You can take pork from any part of the carcass (ham, tenderloin, tenderloin, neck, etc.). I have a ham. You can replace or supplement the vegetable part to your liking.

Wash the pork and dry it. Cut into cubes approximately 3cm wide.

Salt, pepper and mix the meat.

Wash and peel the potatoes. Cut large tubers into medium cubes. You can leave the small potatoes whole.

Peel the carrots and cut into cubes.

Peel the onion and cut into half rings.

Dilute tomato paste in clean drinking water. Determine the amount of water based on the size and depth of your duckling. Only 300 ml fit into my duckling pan; additional water could simply leak out of the mold when boiling. If you want the sauce to be thick, you can add 1 tsp. starch and stir so that there are no lumps.

Heat the butter in a frying pan. Add the pork and, stirring, fry over high heat until golden brown.

Place the prepared vegetables in the duck pot. There is no need to additionally lubricate the duck pot.

Place pieces of fried pork on top of the vegetables.

Top the meat and vegetables with diluted tomato sauce. Salt and pepper everything to taste. Add bay leaf.

Cover the duckling with a lid and place in an oven preheated to 180°C for 1.5 hours. 10-15 minutes before the end of cooking, reduce the temperature to 150°C.
