Slow Cooker Meat with Eggplant and Potatoes

A bright, hearty, aromatic dish with hints of Provence for the whole family!. This dish falls into the "Fast, Easy, Delicious" category — thatʼs my favorite category! It takes no more than 15 minutes to prepare, and the rest will be done by your favorite kitchen assistant — a multicooker. In the meantime, while the miracle pot is cooking, you can calmly go about your business, and even run to the store and you don’t have to worry about being a little late — after all, it will turn off at the end of cooking! Wonderful, isnʼt it?

Basic:

Garlic 3 clove
Tomatoes 1 pc
Olive oil (Any vegetable oil will do) 2 tbsp
Salt to taste
Ground black pepper to taste
Potato 350 g
Parsley 0.5 g
Carrot 1 pc
Bulb onions 2 pc
Pork 500 g
bell pepper 300 g
Dill 0.5 g
Eggplant 400 g
Tomato juice 200 ml
Herbal mixture (I have Provençal herbs, basil, thyme, rosemary will do, choose your favorites) to taste

Required ingredients. Rinse the meat under running water, peel and wash potatoes, onions and carrots well, simply wash and dry peppers, eggplant, tomatoes and greens.

We cut the eggplant lengthwise into 4 parts, then crosswise to a thickness of 1 cm. It’s good that there are now an abundance of vegetables in supermarkets and even in winter you can please yourself with fresh eggplants

Now salt it well and set it aside — this will remove all the bitterness from them.

We cut the meat, but not finely

We set the "Baking" program. Add olive oil to the multicooker bowl and add the meat. In the meantime, letʼs get on with the rest of the vegetables.

Add the rest of the vegetables to the meat, add salt, add Provençal herbs and black pepper, add a glass of hot water and stir, you can also use cold water, but then the cooking time must be increased

After 20 minutes, add tomato juice, you can replace it with tomato paste. But I have homemade juice and I trust it more. In principle, juice can be added immediately when adding vegetables.
