Quick and Easy Vegetarian Tomato Bulgur Soup

Ingredients (5 portions)

Basic:

Tomatoes (or tomato paste 2 tbsp. l.) 2 pc
Salt to taste
Bulb onions 1 pc
Vegetable oil 3 tbsp
Peppercorns (fragrant) 8 pc
Paprika (ground, can be replaced with dried paprika, cut into pieces) 3 tsp
Mint (dried) 1 tsp
Bulgur 150 g
Red lentils 150 g

Recipe instructions

Ingredients for preparing Turkish bulgur soup. The red lentils and bulugur are washed (although I came across information that the bulugur does not need to be washed, but I took a chance), the onions are peeled, they and the tomatoes are washed.

Peel the tomatoes (this is easy to do if you keep them in boiling water for a few minutes), cut them into small cubes or grind them in a blender, and chop the onion finely.

Fry the onion in vegetable oil for a couple of minutes. Add tomatoes or tomato paste to the onions, mix and simmer over low heat for another two minutes.

Pour cold water or vegetable broth into the pan. Place the lentils there and bring to a boil.

Add bulgur to the pan.

Then — dried paprika and allspice. Bring to a boil. Cover the pan with a lid and cook over moderate heat.

Add the onions and tomatoes to the soup pot.

Then add mint to the soup and salt to taste. Cover the pan with a lid and cook over low heat until the lentils and bulgur are soft.

Sprinkle the finished soup with fresh herbs — for example, cilantro.
