Hearty Yellow Pea Soup

An excellent pea soup for fasting days and more. Yellow pea soup with water is a nutritious first course rich in vegetable protein. It must be served hot. Outside of fasting, you can season the soup with sour cream or mayonnaise. Croutons or croutons made from black or white bread, as well as fresh herbs, are also ideal.

Ingredients (4 portions)

Basic:

Salt to taste
Water 1.4 l
Potato 2 pc
Carrot 60 g
Vegetable oil 1 tbsp
Dry spices to taste
Yellow peas 150 g

Recipe instructions

Prepare peas, herbs, potatoes and carrots. Fill the peeled potatoes with water.

Rinse the peas and pour in 0.7 liters of boiling (!) water. Thanks to boiling water, the shell of the peas will be destroyed and the peas will be guaranteed to boil even without soaking.

Cook the peas until they swell.

Add another 0.7 liters of water (any temperature). Cook until the peas begin to fall apart.

Cut the potatoes into small slices and grate the carrots on a coarse grater. Add to the soup, add salt and cook after boiling for 15 minutes. Stir the soup so that the pea puree does not stick to the bottom.

Heat the vegetable oil with spices (turmeric, ground black pepper, paprika, asafoetida), add the spicy oil to the soup 5 minutes before the end of cooking.
