Basic:

Onion 1 pc
Garlic 3 clove
Salt to taste
Wheat flour 1 tbsp
Butter 2 tbsp
Potato 4 pc
Bay leaf 1 pc
Caraway 1 g
Tomato paste 2 tbsp
Carrot 1 pc
Vegetable oil 1 tbsp
Dill 20 g
Allspice 5 pc
Sauerkraut 500 g

Bouillon:

Onion 1 pc
Water 2.5 l
Beef 500 g
Carrot 1 pc

How to cook cabbage soup from sauerkraut? Prepare your food. It is better to take beef, chicken or pork on the bones — this will make the broth richer (depending on the chosen meat, the cooking time for the broth will vary up or down). You can also take fillet. I had beef on the bone.

Place the meat, peeled onion and one carrot in a large saucepan. Pour in clean water. Place the pan over high heat, bring the water to a boil and cook over medium heat, skimming off the foam, for 1.5 hours. If you can add parsley or celery root, the broth will be even more flavorful.

Now prepare all the other ingredients. You can replace sauerkraut with pickled cabbage.

Peel the potatoes and cut into small cubes.

Peel the remaining carrots and grate on a coarse grater.

Cut the second onion into small cubes.

Peel the garlic and pass through a press.

Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.

Heat half the butter in a frying pan over low heat. Add sauerkraut, 1 tbsp. l. tomato paste and cumin. Stir.

Simmer covered for 30 minutes over low heat.

In another frying pan, heat the vegetable oil, add the onion, carrots, remaining tomato paste, salt and pepper and fry for 5 minutes.

Remove the finished meat from the broth, separate from the bones and cut into pieces.

Strain the broth and return to the heat. Place the chopped meat and potatoes into the broth and cook for 10 minutes.

Heat the remaining butter in a frying pan.

Add flour and fry, stirring, until golden brown. If you wish, you can skip steps 13-14 and not add flour to the soup. However, as the final result showed, with flour the cabbage soup turns out tastier and thicker.

Add fried onions and carrots, stewed cabbage, fried flour, chopped garlic, bay leaf and allspice to the pan. Mix everything. The flour should be completely dispersed throughout the soup. Bring to a boil and cook for 6-8 minutes.
