Refreshing Summer Okroshka with Sour Cream

Vitamin-rich, tasty and tonic first course. An appetizing looking and refreshing cold soup that satisfies hunger and thirst at the same time. Usually this dish is eaten in the summer, when the days are hot outside, but this okroshka is also often prepared for all kinds of holidays, even winter ones.

Potato (Young is better, but old is fine too) 2 pc
Sour cream 200 g
Green onions 20 g
Dill 20 g
cucumbers 1 pc
Radish 100 g

Wash the cucumber, cut off the ends and cut into small cubes. Wash and chop the green onions and dill. I used one regular small cucumber, if you have a greenhouse cucumber, then half is enough, since they are usually long.

For okroshka it is better to use young potatoes, but mature ones can also be used. Wash the tubers thoroughly, clearing them of soil and removing sprouts, if any. Place it in a pan with cold and salted water and boil for 25 minutes until tender. Cool, remove skin and eyes and cut into cubes. Place the eggs in the pan with the potatoes at the moment when the water boils. Cook for 10 minutes, transfer to cold water. We also clean and cut into small cubes.

We take good quality sausage without lard. Cut into cubes the same size as the rest of the products. What can replace sausage? Instead of sausage, you can use boiled chicken breast or lean beef.

Wash the radishes and cut them into cubes, also small. For this weight (100 g) I took 4 medium radishes. Instead of regular radishes, you can take daikon — this is a white subspecies of radish. How is daikon different from radish? It does not contain mustard oil and has no pungent odor.

Place all prepared ingredients (cucumber, herbs, eggs, potatoes, sausage, radishes) into a deep bowl.

Add salt and citric acid to taste. Add sour cream. I used sour cream with 20% fat and added 2 more tablespoons of mayonnaise, because I like okroshka richer. You can take sour cream with any fat content to your liking. You can also replace it with unflavored yogurt for a lower calorie meal.

Mix everything carefully and thoroughly. If we add sour cream to the dry ingredients, it will not form lumps.

Pour in cold water, which must be boiled and cooled in advance. You can use filtered. I poured 700 milliliters of water — the okroshka turned out to be medium in thickness. Mix everything. Okroshka is ready. If you do not eat it right away, then pour it into an enamel or glass container and store it in the refrigerator.
