Hearty Red Bean and Meat Soup

Ingredients (8 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Salt to taste
Ground black pepper to taste
Water (approximately) 2.5 l
Potato 300 g
Tomato paste 2 tbsp
Carrot 1 pc
Minced meat 300 g
bell pepper (red) 1 pc
Bacon 50 g
Canned beans (red) 400 g

How to cook canned red bean soup with meat? Prepare the necessary ingredients according to the list. Tomato paste in this recipe can be replaced with tomatoes in their own juice, fresh tomatoes or ketchup. The amount of vegetables in the soup is indicated approximately; you can change the proportions to your taste. I have mixed minced pork and beef, but you can use any other.

Cut the bacon into small slices.

Peel the potatoes and cut into cubes.

Wash the bell pepper, remove seeds and stems and cut into small cubes.

Wash the carrots, peel and cut into small cubes or strips.

Peel the onion and cut into small cubes. If you or your children donʼt like onions, you can omit them altogether, or better yet, add the whole onion after adding water to the pan. It will boil down and give up its juice to the broth. At the very end you can throw it away.

Peel the garlic, chop finely or pass through a press.

Add the onion and fry everything together until the onion is translucent.

Add carrots and fry everything together for 2-3 minutes.

Place the minced meat in a pan and fry, breaking up any lumps, until the minced meat changes color. If you wish, you can form the minced meat into small meatballs and place them in the soup after adding water (step 13).

Add bell pepper and tomato paste to the pan. Salt, pepper and mix everything.

Add potatoes to soup. Bring to a boil and simmer the soup for about 5 minutes.

Add the canned beans and cook for another 5-7 minutes until the potatoes are done. At the end add chopped garlic.

Turn off the heat. Let the soup simmer, covered, for 15 minutes.
