How to cook pork ribs and potatoes soup? First, prepare the necessary products. You can replace fresh pork ribs with smoked ones. You can replace or supplement the vegetable part to your liking. The amount of vegetables in the soup is indicated approximately; you can change the proportions to your taste.

Rinse the pork ribs and cut into segments. If you wish, you can trim excess fat from the ribs to reduce the calorie content of the dish. You can also pre-fry the ribs until golden brown.

Peel the carrots. Cut half of the carrots into slices. Peel the onion, cut in half. Leave one half whole.

Pour water into the pan. Add ribs, half a carrot and half an onion. Bring the broth to a boil and cook over medium heat for 30-35 minutes, skimming off the foam. For preparation, it is better to use filtered or bottled water that is neutral in taste. While the broth is cooking, prepare the remaining vegetables. Peel the potatoes and cut into medium cubes.

Wash the bell pepper, remove seeds and stems and cut into cubes.

Grate the remaining half of the carrots on a coarse grater.

Cut the other half of the onion into small cubes.

Wash the dill, dry and finely chop. You can replace or supplement dill with other herbs, such as parsley, cilantro, or use a mixture of different herbs.

Strain the broth. Remove the boiled half of the onion and carrots. Return the ribs to the broth. Place the pan over medium heat. Add potatoes and spices to the broth. Cook, stirring, for about 10 minutes.

Transfer the roasted vegetables to the soup. Cook covered for another 10-15 minutes.
