How to cook soup with young beans? Prepare your food. I indicated the quantity of ingredients in a 3-liter saucepan, select the proportions and set of vegetables to your taste, you can add more or less of something. If desired, the soup can be prepared with broth or meat can be added. You can use both fresh and frozen vegetables.

Wash and peel the root vegetables well. Cut the onion, carrots and parsnips into small cubes.

Heat the oil in a saucepan over low heat, add the onion, carrots, parsnips and fry them, stirring, for 2-3 minutes. Instead of olive oil, you can use any vegetable oil.

Cut the potatoes into small cubes, add to the vegetables in the pan, stir and pour in water, about 2 liters. Bring to a boil and cook until potatoes are tender, about 10 minutes. Determine readiness with a spoon — the potatoes can be easily mashed. Add salt and pepper to taste.

While the potatoes are cooking, wash the broccoli and cut into small florets.

Add broccoli, Brussels sprouts, beans and peas to the soup. Cook it for a few more minutes.
