Salt to taste
Ground hot pepper to taste
Water 4 l
Bay leaf 1 pc
Beef 400 g
Carrot 120 g
Paprika 1 tsp
Dill 30 g
White beans 400 g

How to make bean soup from white beans? Rinse the white beans and cover with a liter of cold water and leave for at least six hours. I always leave the beans soaked overnight. This is convenient: add water in the evening, and in the morning you can prepare soup.

Wash the beef and remove films, if any. Cut the meat into portions with a sharp knife. Pour cold water into a separate pan and add the beef. Let it cook over low heat. After boiling, remove the foam with a slotted spoon, reduce the heat and cook the meat until soft. The cooking time depends on the quality of the meat — what part of the carcass the piece comes from and the age of the animal. Mine took about an hour to cook.

Drain the water in which the beans were soaked. Pour fresh cold water into another pan and add the soaked beans. Cook the beans over low heat, covered, for forty minutes after the start of boiling.

Use a slotted spoon to transfer the finished beans into the meat broth. You can cook the beans with the beef in one pan, but this way, with separate cooking, the broth is clearer.

Wash and peel the carrots. Grind it in any way — you can use a grater, you can use a knife. I cut it into cubes. Add the carrots to the pan and simmer the soup for another twenty minutes. You can also add onions, but our family doesnʼt like them.

Add finely chopped fresh dill, paprika and bay leaf to the soup. Salt and pepper the soup to taste. Cook it for another ten minutes until done. Then turn off the heat and let the soup simmer under the lid for a while. Then serve it on the table. Bon appetit!
