Basic:

Garlic (1 head) 40 g
Salt to taste
Ground black pepper to taste
Eggs 1 pc
Potato 2 pc
Hard cheese 50 g
Bread (toast) 50 g
Meat broth 1.5 l
Rack of pork ribs (smoked) 500 g
Marjoram (1 teaspoon) 5 g

How to cook aromatic Czech garlic soup with croutons? Very fast! To begin, prepare the necessary ingredients according to the list. Pork ribs are sold in different forms from different manufacturers. We need those with meat between the bones. Ribs in the form of individual bones trimmed of excess meat are not suitable for this soup.

Peel the potatoes and cut into small cubes.

Trim the meat from the smoked ribs. You can save the bones for another soup. They will make a rich broth. If you cook the soup not with broth, but with water, then after boiling the water, you can throw the bones, cleaned of meat, into the pan and boil for 10 minutes. This way you will have a broth, on the basis of which you can then cook the soup.

Grate the cheese on a medium grater. You can use any cheese. I have Tilsiter.

Separate the head of garlic into cloves. Peel each clove. Grate the cloves on a fine grater or pass through a press.

Beat the egg with a fork until the white and yolk combine.

Bring the meat broth to a boil. Add chopped ribs, potatoes and garlic. Stir. Cook for 15-20 minutes over medium heat (I have mode 5 out of 9).

Salt the soup, add ground black pepper and dried marjoram.

While stirring constantly, pour the beaten egg into the soup in a thin stream. Boil for 1 minute.

Turn off the heat and let the soup simmer, covered, for 10-15 minutes.

Ladle the soup into bowls. Add grated cheese and croutons to each. It would be very interesting to serve it in a basket of rye bread. You need to cut off the top of the bread, carefully remove the pulp, leaving a little on the walls. Pour in the garlic soup and serve immediately. Bon appetit!
