Hearty Ground Beef and Rice Soup

A very hearty soup with minced beef, tomato and rice. This hearty soup is prepared like kharcho, only it is not spicy in taste, but tastes more like soup with meatballs. There is no need to make meatballs from the minced meat; on the contrary, in the soup it should be crumbly, like cereal. Ground beef soup does not take long to cook, since it takes much less time to cook already ground meat.

Ingredients (8 portions)

Basic:

Garlic 2 clove
Salt 2 tsp
Water 2.5 l
Rice 2 tbsp
Potato 300 g
Bay leaf 1 pc
Tomato paste 2 tbsp
Carrot 50 g
Bulb onions 150 g
Vegetable oil (for frying) 2 tbsp
Dry spices 1 tsp
Minced meat (beef) 350 g
Greenery (onion, dill) 30 g

We’ll prepare all the necessary ingredients for the soup according to the list, peel and wash the vegetables, and let’s get started. Pour 2 liters of water into a saucepan and put on fire.

While the water is boiling in the pan, cut the onion into small cubes.

We also cut the carrots into small cubes.

Pour vegetable oil into a frying pan, add onion and carrot cubes into it and mix. Place the frying pan with the onions and carrots over high heat and fry, stirring, for 5 minutes.

Next, put the minced beef in the pan and continue to fry, stirring, for about ten minutes.

Meanwhile, cut the potatoes into large cubes.

Place the chopped potatoes in a pan of boiling water and cook for 10 minutes over medium heat.

Meanwhile, wash the rice and drain the water.
