Letʼs prepare the ingredients for the saury and rice soup.

It is better to take long-grain or steamed rice for soup. Wash the rice thoroughly, changing the water several times until it becomes clear.

Peel the onions and cut them into small cubes. Wash the carrots, peel and grate on a medium grater.

Open the jar of canned saury and use a fork to mash the fish pieces together with the butter into small pieces.

Wash the potatoes, peel them and cut them into cubes or strips, as you prefer. Wash the potatoes until the water is clear to remove excess starch and make the broth clearer.

Pour water into the pan, bring to a boil, add washed rice and stir. Reduce heat and cook for 10-15 minutes. Then put the prepared potatoes into the pan and continue cooking for about 15 minutes.

To make the soup broth a beautiful golden color, and the soup itself to become more tender and more aromatic in taste, it is better to fry the carrots and onions in vegetable oil. Pour vegetable oil into the frying pan. Turn on the fire. Place the cooked onions and carrots on the heated oil. Fry the vegetables, stirring constantly with a spatula, over medium heat until the carrots are soft and the onions are golden.

Place the fried vegetables in a pan with potatoes and rice. Cook the soup for about 5 more minutes.

Add canned fish. Stir, take a sample, add salt to taste and peppercorns. Keep it on the fire for a couple more minutes. Then turn off the heat and let the soup sit covered for about 20 minutes.
