Hearty Czech Potato Meat Dumplings

Appetizing, filling, made from regular ingredients, for dinner! Dumplings are a national Czech dish made from potatoes stuffed with meat and then boiled in water. It turns out to be such a large potato dumpling. Dumplings are served with crackling sauce.

How to make dumplings with meat? Take a quarter of the potatoes needed to prepare this dish, wash them and place them in a pan of water. Place the pan over medium heat and bring to a boil. Then reduce the heat and cook the potatoes for 25-35 minutes, depending on the size of the tubers. Determine readiness with a sharp knife — it should pierce the potatoes freely. Drain the water and cool the potatoes.

When the jacket potatoes are almost ready, start grating the remaining raw potatoes on a fine grater, like on potato pancakes.

Line a colander placed in a deep container with a linen towel. Place grated potatoes on it. Gather the edges of the towel so that the potato mixture is in a “bag” and squeeze out excess liquid. Do not overdo it so that the mass does not become too dry, it should remain a little moist.

Place the resulting potato mass in a separate container. Peel the onion, grate one onion using the same grater as the potatoes. Add grated onion to potatoes. Mix the ingredients.

Peel the boiled potatoes, then grate them on a fine grater. Place it in a bowl with raw potato and onion mixture, add half the amount of starch (1.5 tbsp) and salt to taste. Mix the ingredients. Potato dough is ready.

Check the dough for readiness — boil a small amount of water and place a ball of dough into the boiling water. Cook it for about 4 minutes. If it doesn’t fall apart, then everything was done correctly. Otherwise, add a little more starch and test again.

Prepare the dumpling filling. How to make the filling? To do this, take minced meat, I used beef and pork. Cut another onion into small cubes. Place the minced meat and onions in one container, add salt and ground black pepper. Mix everything until smooth.

Sprinkle a board or work surface with potato starch. Divide the resulting potato dough into 8 equal parts. Flatten each piece into a flat cake, and place a spoonful of meat filling in the center.

Gather the edges of the potatoes, forming the dumpling into an oblong patty. Sometimes they are made round, you can shape them as you wish. Place the resulting pieces on a board or work surface covered with cling film.

Take the remaining starch (1.5 tbsp), pour half a glass of water over it, mix well. Pour water into a large saucepan, bring it to a boil, then pour in the starch diluted in water in a thin stream, stirring the contents of the pan all the time. Reduce the heat and very carefully place the dumplings in not very boiling water. Cook them for 20 minutes.

At this time, prepare the sauce. How to make sauce? Dice the bacon and remaining onion. Heat vegetable oil in a frying pan, add onion and bacon. Fry them over low heat until golden brown. At the end of cooking, add salt to taste.

After 20 minutes, carefully remove the dumplings from the pan with a slotted spoon and place on a plate or platter. Top them with the resulting onion and bacon sauce. Serve the dumplings immediately hot. Bon appetit!
