Hard cheese 80 g

Olive oil 2 tbsp
Lemon juice 2 tbsp
Dry spices 1 tsp

How to make pollock baked with tomatoes, cheese and onions in the oven? First, prepare the ingredients required from the list. You can take pollock fresh or frozen. Frozen fish must first be defrosted by transferring it from the freezer to the bottom shelf of the refrigerator. Instead of whole fish, you can use boneless, skin-on fillets or briquettes pressed from the fillets. You can add vegetables to your taste.

Clean the fish from entrails and scales, remove the fins and rinse well. Cut into portions.

Wash the tomatoes, dry and cut into slices. If you have cherry tomatoes, cut them in half. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Peel the onion and cut into thin rings or half rings. You can replace the onions with red onions or shallots.

Grate the cheese on a coarse grater. Any cheese is suitable for this dish — hard, semi-hard. The main thing is that it is tasty, of high quality, without milk fat substitutes, and melts well.

In a bowl, combine olive oil (or any vegetable oil), lemon juice, fish spices, ground black pepper and salt. Mix everything thoroughly. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often these mixtures already contain salt and pepper. Take this into account, otherwise you risk oversalting and peppering the dish. You don’t have to add fish seasoning at all, but it makes it more aromatic and tastier.

Place the prepared pollock in a bowl, pour over the marinade and leave for 20 minutes.

Place onions in a single layer in a baking dish. Place pieces of fish on top. Pour the remaining marinade from the bowl into the pan. Distribute tomato slices between the pollock pieces. Sprinkle grated cheese on top. Place the pan in an oven preheated to 180°C for 25-30 minutes until the fish is ready. The exact time depends on your products, technique and personal preference.
