How to bake thick pancakes with kefir with holes? Prepare the necessary products. It is better to take fresh kefir for these pancakes, with a liquid consistency; 1% fat content is suitable. Take medium eggs, if you have small ones, increase their number.

Break two eggs into a deep bowl, add sugar, salt and vanilla on the tip of a knife. Mix the mixture well with a whisk. Before using, wash eggs in water and soda, as there may be harmful bacteria on their surface. It is not recommended to increase the amount of vanillin, as a larger amount can add bitterness to the finished pancakes. You can replace it with a teaspoon of vanilla sugar.

Pour half of the kefir (250 ml) into the eggs and mix the mixture thoroughly. Add soda, mix and leave the dough for the ingredients to interact with each other for 5 minutes.

Add flour sifted through a sieve and knead the dough. At this stage the dough is very thick and difficult to knead.

Add the remaining kefir and mix thoroughly. You can use a whisk or mixer for this. The dough should be homogeneous, without lumps, and the consistency is thinner than pancake dough. Pour in the vegetable oil and mix thoroughly again. Be prepared for the fact that you may need less or more flour, focus on the required consistency of the dough.

Take a pancake pan and heat it well over medium heat. It is better to fry pancakes in a dry frying pan, but if necessary, the frying pan can be greased with vegetable oil. Pour a ladle of batter into the frying pan, spread it over the entire surface of the bottom of the frying pan and fry over medium heat, first on one side, then turn the pancake over and fry on the other side until golden brown. Pancakes are fried for 1-3 minutes on one side, depending on the pan chosen.
