Ingredients (4 portions)

Basic:

Cinnamon to taste
Butter 50 g
Powdered sugar 2 tbsp

For pancakes:

Sugar 1.5 tbsp
Wheat flour 150 g
Salt to taste
Butter 2 tbsp
Milk 250 g
Eggs 2 pc
Vanilla tincture 1 tsp

For filling:

Sugar 2 tbsp
Apples 5 pc
Lemon juice 50 ml
Cinnamon 1 g
Butter 60 g
Starch 1 tsp
Star anise 1 pc

First, letʼs prepare the pancake dough.

To do this, sift the flour and mix with sugar and salt.

Add 2 eggs and a few tablespoons of milk to make a thick dough.

Knead the mixture well, you should get a smooth, lump-free dough.

Add milk in small portions and knead the dough.

Leave the finished dough for 15 minutes to rest, during which time we will prepare the filling.

Peel the apples and cut the middle into cubes.

Melt butter in a frying pan and add apples.

Fry for a few minutes. Add a cinnamon stick and star anise, lemon juice and sugar, mix and simmer until the apples are soft (7 minutes). If the mixture turns out to be too liquid, add a little starch diluted with water (I didn’t need it). Let the filling cool.

Add melted butter to the pancake batter, mix and fry thin pancakes.

Place the filling on each pancake and wrap it in an envelope. Fry the finished pancakes in butter until crispy (optional), sprinkle with a mixture of powdered sugar and cinnamon. Pancakes are ready! Bon appetit!
