Meat and Rice Stuffed Pancakes

Thin, soft, with delicious filling, for breakfast, lunch, dinner. The good thing about meat and rice pancakes is that they can be easily frozen for later use. Then just warm them up and serve them hot with sour cream or any sauce in the morning, afternoon or evening. They are great for snacking at school or work.

Ingredients (10 portions)

For pancakes::

Eggs 2 pc
Milk 500 ml
Wheat flour 250 g
Vegetable oil 2 tbsp
Sugar 2 tbsp
Salt to taste

For filling::

Minced meat 350 g
Rice 50 g
Onion 1 pc
Vegetable oil 20 g
Salt to taste
Dry spices to taste

How to make stuffed pancakes with meat and rice? Prepare the necessary ingredients for this. For the filling you can use minced meat from any type of meat. I take minced pork.

To prepare pancakes, combine milk with eggs and add salt and sugar. Mix.

Pour in the vegetable oil and gradually add the sifted flour. There is no need to add all the flour at once. Focus on the consistency of the dough.

The finished pancake dough is quite liquid. This is exactly what is needed for the pancakes to be thin.

Before the first pancake, grease the pancake pan a little with vegetable oil. Pour the batter in a thin layer and bake the pancakes, browning them on both sides.

Stack the finished pancakes on top of each other and cover with a lid to prevent them from drying out.

To prepare the filling, boil the rice in boiling water for about 15 minutes. The rice should become soft. Drain it in a colander, rinse with cold water and leave to stand to drain off excess water.

Peel the onion, rinse and finely chop. Pour a little vegetable oil into a hot frying pan and fry the onion for a minute until transparent.

Then add the minced meat to the pan. Stir together with the onion and fry for another 9-10 minutes. Add some salt and spices. I add ground pepper. But you can add more aromatic spices, such as rosemary, oregano or basil.

When the minced meat is ready, add boiled rice to the pan. Mix everything and remove the pan from the heat. Cool the filling until warm.

Place a couple of spoons of filling on the pancake and roll it up. Wrap all the pancakes like this.
