Dry yeast 1 tbsp
Wheat flour 1 cup
Water 1 cup
Sugar 1 tsp

For dough:

Wheat flour 100 g
Milk 2 cup
Eggs 2 pc
Salt 0.33 tsp
Vegetable oil 20 g

Letʼs organize a quick dough first. To do this, pour the yeast into a bowl (if you have fresh yeast, then take 16 g and crumble it).

Letʼs heat the water very slightly (remember, this is a glass) and add it to the yeast. We need to dilute them properly and pour a glass of sifted flour into a bowl. Mix thoroughly in a convenient way (I mixed it with a mixer so that there were no lumps).

Add the sugar and mix again, but you can use a fork or whisk. The dough is already foaming under your hands. But we need to put it in a warm place for half an hour, covering the bowl with cling film. As soon as we see this foamy cap above the dough, we will begin kneading the dough itself.

Heat the milk until warm and pour it into the dough. Beat the eggs and also place them in a bowl. Mix well.

Salt the mixture and add some of the flour reserved for the dough (100 g) into it. It will be smooth if you, like me, use a mixer. Remember that the dough should have an even consistency — neither thick nor liquid.

Place the bowl in a warm place again. And also for half an hour (it may rise earlier, keep an eye on the test). As soon as it starts to bubble, you can put the pan on the stove. After greasing it with oil, take the dough into a ladle, pour it into the middle and distribute it evenly along the bottom. If you kneaded the dough correctly and rested it, it will spread evenly and thinly. Look what an openwork pancake it turns out to be!

Turn it over and fry until the second side is browned. Pancakes fry quickly. Sprinkle each with sugar, brush with honey — to your taste!
